Ingredients:
- 2 Eggs
- 1 Clementine (peeled, sectioned)
- 1/2 cup Cottage Cheese
- 2 tbsp Pumpkin Seeds
Guidance
- Place the eggs in a saucepan and cover with water. Bring to a boil over high heat. Once boiling, turn off the heat but keep the saucepan on the hot burner. Cover and let sit for 10 to 12 minutes.
- Strain the water and fill the saucepan with cold water. Peel the eggs when they are cool enough to handle.
- Arrange the hardboiled eggs, clementine slices, cottage cheese, and pumpkin seeds on a plate or in a container. Enjoy!
Additional Notes
- Best if enjoyed immediately.
- Hard-boiled eggs can keep in the refrigerator in an air-tight container (either in shell or peeled) for up to 6-7 days.
- No cottage cheese? Use 3/4 cup Greek yogurt instead
- Dairy free? Use a vegan cottage cheese or a coconut yogurt instead.
- Need some extra flavor? Sprinkle salt and pepper on hard-boiled egg and cottage cheese. Like it spicy? Use red pepper flakes too.
