Place the eggs in a saucepan and cover with water. Bring to a boil over high heat. Once boiling, turn off the heat but keep the saucepan on the hot burner. Cover and let sit for 10 to 12 minutes.
Strain the water and fill the saucepan with cold water. Peel the eggs when they are cool enough to handle.
Arrange the hardboiled eggs, clementine slices, cottage cheese, and pumpkin seeds on a plate or in a container. Enjoy!

Hard-boiled eggs can keep in the refrigerator in an air-tight container (either in shell or peeled) for up to 6-7 days.
No cottage cheese? Use 3/4 cup Greek yogurt instead
Dairy free? Use a vegan cottage cheese or a coconut yogurt instead.
Need some extra flavor? Sprinkle salt and pepper on hard-boiled egg and cottage cheese. Like it spicy? Use red pepper flakes too.
